- 200 g Konjac noodles (shirataki)
- 200 g Firm tofu
- 130 g Zucchini
- 8 g Thai basil
- 10 g Ginger
- 1 tsp Garlic-infused olive oil
- ½ Lime
Method
- Press the tofu under a weight for ten minutes, then cut it into thick fingers. Cut the courgette into half-moons, grate the ginger and pick the basil.
- Drain and rinse the konjac noodles, then dry-fry them in a bare pan four minutes until they squeak and the pan is dry.
- Fry the tofu in the garlic-infused oil over medium-high for six minutes, turning only when each face has gone golden and releases by itself.
- Add the courgette and ginger and cook two minutes more, until the courgette softens at the edges.
- Off the heat, fold in the dried noodles and the lime juice, then the basil last so it wilts in the residual warmth without losing its scent.
