Ingredients

  • 200 g Brown rice
  • 150 g Soybeans
  • 200 g Bean sprouts
  • 2 tbsp Toasted sesame oil
  • 1 tbsp Sesame seeds
  • 3 Scallions
  • 4 cloves Garlic
  • 2 tbsp Doenjang
  • 200 g Firm tofu
  • 1 Zucchini
  • 150 g Korean radish (optional)
  • 1 tsp Gochugaru (optional)

Method

  1. Soak the soybeans and brown rice for an hour, then drain.
  2. Cook the rice and beans together with fresh water until tender, 35 minutes.
  3. Blanch the soybean sprouts for 4 minutes, drain, and toss with half the sesame oil, seeds, scallion, and garlic.
  4. For the stew, simmer the radish in water, whisk in the doenjang, then add the diced zucchini, tofu, and gochugaru and simmer 12 minutes.
  5. Serve the bean rice with the sprout banchan and the stew alongside.
