- 200 g Brown rice
- 150 g Soybeans
- 200 g Bean sprouts
- 2 tbsp Toasted sesame oil
- 1 tbsp Sesame seeds
- 3 Scallions
- 4 cloves Garlic
- 2 tbsp Doenjang
- 200 g Firm tofu
- 1 Zucchini
- 150 g Korean radish (optional)
- 1 tsp Gochugaru (optional)
Method
- Soak the soybeans and brown rice for an hour, then drain.
- Cook the rice and beans together with fresh water until tender, 35 minutes.
- Blanch the soybean sprouts for 4 minutes, drain, and toss with half the sesame oil, seeds, scallion, and garlic.
- For the stew, simmer the radish in water, whisk in the doenjang, then add the diced zucchini, tofu, and gochugaru and simmer 12 minutes.
- Serve the bean rice with the sprout banchan and the stew alongside.
