- 250 g Dried mung beans
- 150 g Bean sprouts
- 4 Scallions
- 3 cloves Garlic
- 4 tbsp Neutral oil
- 250 g Cabbage
- 2 tbsp Toasted sesame oil
- 1 tsp Gochugaru (optional)
- 1 tbsp Sesame seeds (optional)
- 1 tbsp Light soy sauce (optional)
- 150 g Firm tofu (optional)
Method
- Soak the mung beans for an hour, then drain and blend to a coarse batter with the garlic and a little water.
- Fold half the sprouts, the scallions, and gochugaru into the batter and fry thick pancakes in the oil until crisp, 12 minutes.
- Blanch the shredded cabbage and toss with the sesame oil, seeds, and soy for a quick banchan.
- Simmer the remaining sprouts and tofu in water into a light clear soup, 8 minutes.
- Serve the pancakes with the cabbage banchan and a bowl of the sprout soup.
