  • 180 g Brown rice
  • 80 g Farro
  • 100 g Adzuki beans (red bean / anko)
  • 2 Eggplant
  • 2 tbsp Toasted sesame oil
  • 2 tbsp Light soy sauce
  • 3 cloves Garlic
  • 3 Scallions
  • 120 g Dried mung beans
  • 1 tbsp Sesame seeds (optional)
  • 150 g Korean radish (optional)
  • 1 tsp Gochugaru (optional)

Method

  1. Soak the brown rice, farro, and adzuki for an hour, then drain.
  2. Cook the grains and adzuki together until tender, 35 minutes.
  3. Steam the eggplant until soft, then tear into strips and season with the sesame oil, soy, garlic, scallion, and seeds.
  4. Simmer the mung beans with the radish and gochugaru until the beans soften into a light soup, 25 minutes.
  5. Plate the multigrain rice with the eggplant banchan and a bowl of mung bean soup.
