Ingredients

  • 110 g Brown rice
  • 250 g Chicken breast
  • 2 tsp Dried oregano
  • 1 Lemon
  • 1 tbsp Olive oil
  • 120 g Green beans (optional)
  • 120 g Tomato (optional)
  • 30 g Feta (optional)
  • 10 g Parsley (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 30 minutes.
  2. While the rice cooks: butterfly the chicken breast to an even thickness, then rub it with the oregano, salt and the zest of the lemon.
  3. While the rice cooks: top and tail the green beans, chop the tomato, and chop the parsley.
  4. Warm half the olive oil in a pan over medium and stew the green beans with the tomato and a splash of water for 12 minutes, until the beans are soft right through and the tomato has reduced around them.
  5. Heat the remaining olive oil in a second pan over medium-high and brown the chicken for 5 minutes on the first side, until it lifts cleanly.
  6. Turn the chicken, squeeze over half the lemon and cook 4 minutes more until firm and cooked through. Rest it on a board.
  7. Fluff the brown rice onto a plate, spoon the tomato beans alongside, and slice the rested chicken over the top. Crumble the feta over while everything is hot, add the parsley and squeeze over the rest of the lemon.
