  • 170 g Chicken breast
  • 120 g Potatoes
  • 1 Pita
  • 1 Lemon
  • 1 tsp Dried oregano
  • 2 tbsp Olive oil
  • 60 g Greek yogurt (optional)
  • 50 g Tomato (optional)
  • 40 g Cucumber (optional)

Method

  1. Cut the potatoes into thick chips with the skin left on and turn them in half the olive oil with half the oregano and the juice of half a lemon, until every face of every chip is wet.
  2. Spread the chips in one layer on a hot tray and roast them at 220°C (425°F) for half an hour, shaking the tray once when the corners start to catch, until the edges are brown and the lemon has gone sticky around them.
  3. While the tray is in, open the chicken breast out like a book and cut it into flat strips, then season them with the rest of the oregano.
  4. Grate the cucumber and press the water out of it against the side of a sieve, then beat the shreds into the Greek yoghurt. Dice the tomato and leave it sitting in its own juice.
  5. While the chips roast, put the rest of the olive oil into a griddle pan over a high flame and press the chicken strips onto the ridges for eight minutes in all, turning them only once they lift away cleanly.
  6. Wrap the pita in foil and slide it into the oven beside the tray for the last three minutes of the roast, so it warms through in its own steam instead of drying out.
  7. Smear the cucumber yoghurt inside the pita, lay in the chicken, then the tomato, then the chips straight off the tray, and squeeze the last of the lemon over everything before you close it.
  8. Wrap the base in paper so it holds its shape, and eat it from the top down.
