Larb Gai with Brown Rice and Herbs
Minced chicken cooked dry rather than fried, then dressed off the heat with lime and fish sauce and loaded with far more mint and coriander than looks sensible.

Ingredients
- 22 g Brown rice
- 180 g Chicken breast
- 2 tsp Fish sauce
- ½ Lime
- 12 g Mint
- 80 g Green beans (optional)
- 100 g Bean sprouts (optional)
- 80 g Cucumber (optional)
- 2 Thai chilies (optional)
- 12 g Cilantro (optional)
Method
- Rinse the brown rice, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 26 minutes.
- While the rice cooks: chop the chicken breast finely by hand until it is coarse mince. Top and tail the green beans.
- While the rice cooks: slice the cucumber and chillies, pick the mint and coriander leaves, and whisk the fish sauce with the juice of the lime.
- Put the chicken into a dry hot pan with a splash of water and cook 5 minutes, breaking it up constantly, until it turns white and crumbly with no liquid left. Larb is cooked dry, not fried.
- Add the green beans for the last 2 minutes so they keep their squeak, then take the pan off the heat.
- Pour the lime and fish sauce dressing over the hot chicken and fold it through off the heat — the residual warmth carries it into the meat without cooking the lime.
- Fork the brown rice into a bowl, spoon the larb over it, and pile on the bean sprouts, cucumber, chilli and all the herbs. Fold once at the table so the leaves stay whole.
