  • 2 Carrot
  • 1 Potatoes
  • 1 Onion
  • 3 cloves Garlic
  • 1 tbsp Pimenton dulce (sweet smoked paprika)
  • 3 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 1 Bay leaves (optional)

Method

  1. Dice the carrot, potato, onion, and garlic.
  2. Soften the vegetables in the oil until the onion is translucent, then stir in the paprika.
  3. Add the lentils, bay leaves, salt, and plenty of water and simmer until the lentils are tender, about 28 minutes.
  4. Serve hot.
