  • 60 g Lupin pasta
  • 200 g Squid
  • 120 g Cherry tomatoes
  • 2 cloves Garlic
  • 1 tsp Extra-virgin olive oil
  • 1 Chili (optional)
  • 8 g Parsley (optional)

Method

  1. Bring a pot of water to a boil and salt it.
  2. Score the squid in a diamond across the inside face and cut it into wide bands, so it curls as it hits the heat instead of buckling. Halve the tomatoes, slice the garlic, ring the chilli and chop the parsley.
  3. Warm the olive oil with the garlic and chilli until pale gold, then add the tomatoes cut-side down and leave them four minutes until they collapse into the oil.
  4. Raise the heat and put the squid in for ninety seconds, no more — it is tender for a minute and then tough for twenty. Kill the heat.
  5. Cook the lupin pasta in the boiling water for six minutes, tasting early. Drain, saving a ladleful of the water.
  6. Toss the pasta through the pan off the heat with a splash of the water, so the squid does not keep cooking, and scatter the parsley.
