  • 60 g Lupin pasta
  • 200 g Shrimp
  • 40 g Arugula
  • ½ Lemon
  • 2 cloves Garlic
  • 1 tsp Extra-virgin olive oil
  • 100 g Cherry tomatoes (optional)

Method

  1. Bring a pot of water to a boil and salt it.
  2. Blot the prawns dry, slice the garlic thinly and halve the tomatoes.
  3. Warm the olive oil with the garlic until it turns pale gold, add the tomatoes for three minutes until they slump, then the prawns for ninety seconds a side until they curl tight. Kill the heat and squeeze in the lemon.
  4. Cook the lupin pasta in the boiling water for six minutes — bean flour softens faster than wheat, so taste it early. Drain, saving a ladleful of the water.
  5. Toss the pasta through the pan with a splash of the water, then fold the rocket in off the heat so it only just wilts and keeps its pepper.
