- 60 g Lupin pasta
- 200 g White fish fillet
- 130 g Zucchini
- ½ Lemon
- 1 tsp Extra-virgin olive oil
- 1 clove Garlic (optional)
- 8 g Parsley (optional)
Method
- Bring a pot of water to a boil and salt it.
- Cut the courgette into thin half-moons, slice the garlic and chop the parsley.
- Warm the olive oil with the garlic and cook the courgette for five minutes over a medium flame, until it turns translucent at the edge.
- Lay the fish on top of the courgette, cover the pan and leave it six minutes without turning, until it flakes at a gentle push. Squeeze in the lemon off the heat.
- Cook the lupin pasta in the boiling water for six minutes, tasting early. Drain, saving a ladleful of the water.
- Toss the pasta through the courgette with a splash of the water, then break the fish over in large flakes rather than stirring it in, and scatter the parsley.
