  • 60 g Lupin pasta
  • 200 g White fish fillet
  • 130 g Zucchini
  • ½ Lemon
  • 1 tsp Extra-virgin olive oil
  • 1 clove Garlic (optional)
  • 8 g Parsley (optional)

Method

  1. Bring a pot of water to a boil and salt it.
  2. Cut the courgette into thin half-moons, slice the garlic and chop the parsley.
  3. Warm the olive oil with the garlic and cook the courgette for five minutes over a medium flame, until it turns translucent at the edge.
  4. Lay the fish on top of the courgette, cover the pan and leave it six minutes without turning, until it flakes at a gentle push. Squeeze in the lemon off the heat.
  5. Cook the lupin pasta in the boiling water for six minutes, tasting early. Drain, saving a ladleful of the water.
  6. Toss the pasta through the courgette with a splash of the water, then break the fish over in large flakes rather than stirring it in, and scatter the parsley.
