  • 55 g Lupin pasta
  • 190 g Chicken breast
  • 40 g Arugula
  • ½ Lemon
  • 1 tsp Extra-virgin olive oil
  • 1 clove Garlic
  • 8 g Basil

Method

  1. Bring a pot of water to a boil and salt it.
  2. Open the chicken breast out flat so it cooks at one thickness, season it, and slice the garlic thinly.
  3. Cook the chicken in the olive oil with the garlic, five minutes on the first side and three on the second, until it is well coloured and springs back under a finger. Move it to a board and squeeze the lemon into the pan.
  4. Rest the chicken four minutes, then tear it along the grain into thick strips.
  5. Cook the lupin pasta in the boiling water for six minutes, tasting early. Drain, saving a ladleful of the water.
  6. Toss the pasta through the lemon pan with a splash of the water, lay the torn chicken over with its juices, then fold the rocket in off the heat and tear the basil across so it does not blacken.
