  • 60 g Lupin pasta
  • 150 g Tuna
  • 10 g Capers
  • 1 clove Garlic
  • 1 tsp Extra-virgin olive oil
  • 120 g Cherry tomatoes (optional)
  • 8 g Parsley (optional)

Method

  1. Bring a pot of water to a boil and salt it.
  2. Halve the tomatoes, slice the garlic, rinse the capers of their brine and chop the parsley. Drain the tuna.
  3. Warm the olive oil with the garlic until pale gold, then add the tomatoes cut-side down and leave them four minutes until they collapse into the oil. Stir the capers through and kill the heat.
  4. Cook the lupin pasta in the boiling water for six minutes, tasting early. Drain, saving a ladleful of the water.
  5. Toss the pasta through the pan with a splash of the water, then flake the tuna over in large pieces and fold it through once only — stirred hard it shreds to nothing. Scatter the parsley.
