- 60 g Lupin pasta
- 150 g Tuna
- 10 g Capers
- 1 clove Garlic
- 1 tsp Extra-virgin olive oil
- 120 g Cherry tomatoes (optional)
- 8 g Parsley (optional)
Method
- Bring a pot of water to a boil and salt it.
- Halve the tomatoes, slice the garlic, rinse the capers of their brine and chop the parsley. Drain the tuna.
- Warm the olive oil with the garlic until pale gold, then add the tomatoes cut-side down and leave them four minutes until they collapse into the oil. Stir the capers through and kill the heat.
- Cook the lupin pasta in the boiling water for six minutes, tasting early. Drain, saving a ladleful of the water.
- Toss the pasta through the pan with a splash of the water, then flake the tuna over in large pieces and fold it through once only — stirred hard it shreds to nothing. Scatter the parsley.
