Ingredients

  • 80 g Lupin pasta
  • 300 g Clams
  • 2 cloves Garlic
  • 1 Chili
  • 12 g Parsley
  • 1 tbsp Extra-virgin olive oil
  • ½ Lemon (optional)

Method

  1. Bring a pot of water to a boil. Salt it lightly — clams carry their own salt and the liquor will season the dish.
  2. Scrub the clams and discard any that stay open when tapped. Slice the garlic, ring the chilli and chop the parsley.
  3. Warm the olive oil with the garlic and chilli until the garlic is pale gold, then tip in the clams, cover and give them three minutes over a high flame until they open. Throw away any that stay shut.
  4. Cook the lupin pasta in the boiling water for six minutes, tasting early. Drain, saving a ladleful of the water.
  5. Toss the pasta into the clam pan with a splash of the water and swirl it hard so the liquor thickens against the starch, then fold in the parsley and squeeze over the lemon.
