Ingredients

  • 22 g Basmati rice
  • 220 g White fish fillet
  • 30 g Yogurt
  • 1 tsp Garam masala
  • ½ Lemon
  • 150 g Spinach (optional)
  • 100 g Tomato (optional)
  • ½ tsp Ground turmeric (optional)
  • 10 g Ginger (optional)
  • 12 g Cilantro (optional)

Method

  1. Rinse the basmati until the water runs clear, then cook it in twice its volume of salted water, covered, until tender and the water is absorbed, about 12 minutes.
  2. Cut the fish into large pieces. Grate the ginger into the yoghurt with the garam masala, turmeric and salt, and turn the fish gently through it — gently, or it will break before it cooks.
  3. Chop the tomato, wash the spinach and chop the coriander.
  4. Get a heavy pan hot and lay the fish in. Cook 3 minutes a side, turning once only, until the yoghurt has set into a crust and the fish flakes at a push. Lift it out.
  5. Tip the tomato into the same pan and cook 2 minutes, then add the spinach and turn it through until it collapses into the spiced juices. Squeeze in half the lemon off the heat.
  6. Spoon the basmati onto a plate, add the spinach and tomato beside it and set the fish on top in its pieces. Scatter the coriander and serve the rest of the lemon alongside.
