About Smoky Mackerel & Farro Salad

This smoky mackerel and farro salad belongs to the modern Mediterranean grain-bowl tradition, where an ancient wheat and a cheap, sustainable tinned fish do most of the heavy lifting. Farro is an old durum-type wheat prized for the way it stays chewy and distinct rather than turning soft, and simmering it in plenty of salted water like pasta gives each grain a nutty backbone that stands up to bold flavors. Tinned mackerel brings smoke, richness, and a deep savory hit of oily fish, so the bowl reads as substantial and satisfying rather than like a token side salad. Lemon, parsley, and raw vegetables cut straight through that richness to keep everything bright.

What makes the dish work is the contrast of temperature and texture: warm, tender grains against cool cucumber and tomato, with shaved red onion adding a sharp raw bite. Tossing the vegetables and herby lemon-olive-oil dressing into the farro while it is still warm lets the grains drink in the acidity instead of sitting on top of it, and the mackerel goes on last so its flakes stay intact. It eats equally well warm from the pot or chilled from the fridge the next day, which makes it a genuinely practical lunch you can build ahead. Serve it on its own as a light dinner, or alongside crusty bread and a few olives for something closer to a Mediterranean spread.
