Seared Tuna and Brown Rice Donburi with Avocado

- 120 g Brown rice
- 200 g Sashimi-grade tuna
- 1 tbsp Soy sauce
- 1 tsp Toasted sesame oil
- 60 g Avocado (optional)
- 80 g Edamame (optional)
- 10 g Ginger (optional)
- 2 tsp Rice vinegar (optional)
- 15 g Scallions (optional)
- 2 tsp Sesame seeds (optional)
- 2 g Nori sheets (optional)
Method
- Rinse the brown rice until the water runs clear, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 30 minutes.
- While the rice cooks: pat the tuna completely dry and press the sesame seeds onto all sides of it. Grate the ginger.
- While the rice cooks: slice the avocado, slice the scallions thinly, and stir the soy sauce, rice vinegar and grated ginger together into a dressing.
- Get a heavy pan very hot with the sesame oil and sear the tuna for 45 seconds a side — just long enough to colour the crust and leave the centre raw. Lift it straight out onto a board.
- Drop the edamame into the same pan for 1 minute to warm through and pick up the sesame in the bottom.
- Fluff the brown rice into a deep bowl. Slice the tuna thickly against the grain and fan it over the rice with the avocado and warm edamame. Spoon the ginger dressing over, then scatter the scallions and torn nori.
