  • 150 g Chickpeas
  • 150 g Cannellini beans
  • 100 g Kidney beans
  • 100 g Puy lentils
  • 2 Onion
  • 1 tsp Ground cumin
  • 4 tbsp Olive oil
  • ½ tsp Salt
  • 60 g Bulgur (optional)

Method

  1. Soak the chickpeas, white beans, and kidney beans overnight, then drain.
  2. Fry the sliced onions in the olive oil until deep golden, reserving half for topping.
  3. Add the soaked beans, cumin, salt, and plenty of water and simmer until tender, 50 minutes.
  4. Add the lentils and bulgur and cook until thick, 15 minutes, then top with the reserved onions and serve.
