- 150 g Chickpeas
- 150 g Cannellini beans
- 100 g Kidney beans
- 100 g Puy lentils
- 2 Onion
- 1 tsp Ground cumin
- 4 tbsp Olive oil
- ½ tsp Salt
- 60 g Bulgur (optional)
Method
- Soak the chickpeas, white beans, and kidney beans overnight, then drain.
- Fry the sliced onions in the olive oil until deep golden, reserving half for topping.
- Add the soaked beans, cumin, salt, and plenty of water and simmer until tender, 50 minutes.
- Add the lentils and bulgur and cook until thick, 15 minutes, then top with the reserved onions and serve.
