- 450 g Black-eyed peas
- 4 Scallions
- 20 g Dill
- 2 Lemon
- 4 tbsp Olive oil
- 0.4 tsp Salt
- 2 Tomato (optional)
Method
- Simmer the black-eyed peas until tender but holding, 30 minutes, and drain.
- Slice the scallions and tomato and chop the dill.
- Toss the warm peas with the vegetables, olive oil, lemon, and salt and serve.
