  • 450 g Black-eyed peas
  • 4 Scallions
  • 20 g Dill
  • 2 Lemon
  • 4 tbsp Olive oil
  • 0.4 tsp Salt
  • 2 Tomato (optional)

  1. Simmer the black-eyed peas until tender but holding, 30 minutes, and drain.
  2. Slice the scallions and tomato and chop the dill.
  3. Toss the warm peas with the vegetables, olive oil, lemon, and salt and serve.
