  • 150 g Quinoa
  • 1 tin Chickpeas
  • 1 Zucchini
  • 1 Bell pepper
  • 3 tbsp Tahini
  • 1 Lemon
  • 1 tsp Ground cumin
  • 3 tbsp Extra-virgin olive oil
  • ¾ tsp Salt

Method

  1. Heat the oven to 220°C (425°F).
  2. Chop the zucchini and bell pepper into bite-size pieces.
  3. Toss the zucchini, pepper, and chickpeas with the olive oil, cumin, and salt on a tray and roast until caramelised, about 22 minutes.
  4. While the vegetables roast, cook the quinoa in plenty of water until the grains are fluffy and the germ has uncurled, about 15 minutes, then drain.
  5. Whisk the tahini and lemon juice with a little water into a pourable dressing.
  6. Build bowls of quinoa and roasted vegetables and drizzle with the tahini dressing.
