  • 480 g Cannellini beans
  • 150 g Kale
  • 1 Onion
  • 3 cloves Garlic
  • 800 ml Vegetable stock
  • 3 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 200 g Canned tomatoes (optional)
  • 1 Carrot (optional)
  • 1 tsp Rosemary (optional)

Method

  1. Dice the onion and carrot; mince the garlic and strip and chop the kale.
  2. Soften the onion and carrot in the oil over medium heat, then add the garlic and rosemary for 1 minute.
  3. Add the tomatoes, drained beans, stock, and salt and bring to a simmer.
  4. Stir in the kale and simmer until tender, about 12 minutes, mashing some beans to thicken.
  5. Drizzle with a little more olive oil and serve hot.
