Ingredients

  • 240 g White fish fillet
  • 2 Corn tortillas
  • ½ tsp Brown mustard seeds
  • 1 sprig Curry leaves
  • 10 g Ginger
  • ½ tsp Ground turmeric
  • ½ Lime
  • 1 tsp Garlic-infused olive oil
  • 80 g Zucchini (optional)
  • 8 g Cilantro (optional)

Method

  1. Cut the white fish into pieces about two fingers wide and rub them all over with the turmeric and the grated ginger.
  2. Slice the courgette into thin half-moons and squeeze the lime over them so they slacken while you cook.
  3. Heat the garlic-infused oil in a nonstick pan until one mustard seed dropped in cracks, then tip in the rest with the sprig of curry leaves and stand back. When the spluttering slows, give the courgette two minutes and push it out to the rim of the pan.
  4. Lay the fish into the cleared middle, three minutes on the first side and three on the second, turning it the once and no more — a second turn is what breaks the pieces apart.
  5. Once the fish is in the pan, drop the corn tortillas onto a second dry burner and give them forty seconds a side, twice around, until brown blisters rise across them.
  6. Carry the pan to the table with the warm tortillas and the coriander torn over the fish, breaking off a piece and folding it into a tortilla one at a time.
