- 1 Onion
- 1 Carrot
- 1 tsp Ground cumin
- 3 tbsp Olive oil
- 1 Lemon
- ½ tsp Salt
- 1 Potatoes (optional)
- 1 tsp Mint (optional)
Method
- Dice the onion, carrot, and potato.
- Soften the vegetables in half the olive oil with the cumin, 5 minutes.
- Add the rinsed lentils, salt, and water and simmer until everything collapses, 25 minutes.
- Blend smooth, then serve with lemon, mint, and the remaining olive oil warmed to a sizzle.
