- 110 g Brown rice
- 250 g Chicken breast
- 1½ tsp Garam masala
- 12 g Ginger
- 1 tbsp Olive oil
- 60 g Yogurt (optional)
- 100 g Spinach (optional)
- 100 g Tomato (optional)
- ½ tsp Ground turmeric (optional)
- 12 g Cilantro (optional)
Method
- Cut the chicken into large chunks. Grate the ginger and the tomato, and chop the coriander. Rinse the brown rice until the water runs clear.
- Heat the olive oil in a heavy pot over medium-high and brown the chicken on all sides for 6 minutes. Lift it out and set it aside.
- Add the ginger, garam masala and turmeric to the pot and cook 1 minute until the raw smell lifts, then stir in the grated tomato and cook 3 minutes until it darkens and the oil shows at the edges.
- Take the pot off the heat before stirring in the yoghurt — added to a boiling pot it will split — then return the chicken, add the rice and twice its volume of water, and bring to a simmer.
- Cover and cook undisturbed over low heat for 30 minutes, until the rice is tender and all the liquid has gone.
- Scatter the spinach over the surface, replace the lid and leave the pot off the heat for 6 minutes. The spinach wilts in the trapped steam and the grains firm up before they are disturbed.
- Fork the rice up through the wilted spinach and chicken, turn it into a bowl and scatter the coriander over.
