- 180 g Chicken breast
- 1 Low-carb tortillas
- 25 g Greek yogurt
- 8 g Mint
- 10 g Ginger
- 2 cloves Garlic
- 1 tsp Black pepper
- ½ tsp Garam masala
- ½ Lemon
- ½ tsp Neutral oil
- ¼ tsp Salt
- 60 g Spinach (optional)
- 40 g Carrot (optional)
Method
- Cut the chicken breast into finger-thick strips, then grate the ginger and garlic straight over them and add the black pepper, garam masala, salt and the juice of the half lemon. Work it in with your hands until every strip is grey with pepper.
- Leave the strips to sit for ten minutes — long enough for the pepper to bite into the surface, short enough that the lemon does not start firming up the meat.
- Chop the mint leaves as fine as you can and fold them through the Greek yoghurt until it is flecked all the way through and loose enough to spoon.
- Stack the spinach leaves and cut them into ribbons, and grate the carrot on the coarse holes.
- Film a heavy nonstick pan with the oil over a high flame and give it a minute to come up. Lay the strips down spaced apart, leave them four minutes without touching them, then turn them and give them three more, until the pepper has gone almost black and the meat springs back when pressed.
- As the chicken builds its crust, lay the wholewheat tortilla on a second dry burner over a low flame and turn it once or twice across three minutes, until it puffs in patches and goes slack.
- Streak the mint yoghurt across the warm tortilla, scatter the spinach and carrot over it, lay the pepper chicken down the middle and roll it up tight, folding the near edge over the filling first.
- Cut it in half at a steep angle and eat it while the crust is still crackling against the cold yoghurt.
