- 2 Corn tortillas
- 240 g White fish fillet
- 1 tsp Ground cumin
- ½ Lime
- 1 tsp Olive oil
- 70 g Cabbage (optional)
- 40 g Tomato (optional)
- 1 Jalapeno (optional)
- 12 g Cilantro (optional)
Method
- Cut the fish into thick fingers, pat them dry and toss with the cumin and salt.
- Shred the cabbage very fine, dice the tomato and jalapeno, chop the coriander, and dress the lot with the juice of half the lime and a pinch of salt. Leave it to sit and soften slightly.
- Heat the olive oil in a heavy pan over high and cook the fish for 4 minutes, turning once, until it is opaque through and browned at the edges. Break it into large pieces in the pan.
- While the fish cooks, warm the corn tortillas one at a time in a dry pan, about 30 seconds a side, and stack them under a cloth so they steam each other soft.
- Bring the fish, the warm tortillas, the cabbage salad and the remaining lime to the table and let everyone build their own tacos — assembled early they go soggy.
