Ingredients

  • 22 g Brown rice
  • 230 g White fish fillet
  • 150 g Tomato
  • 1 Lime
  • 1 tsp Olive oil
  • 80 g Bell pepper (optional)
  • 100 g Spinach (optional)
  • 1 Jalapeno (optional)
  • 12 g Cilantro (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 26 minutes.
  2. While the rice cooks: chop the tomato roughly, slice the pepper and jalapeno into strips, and chop the coriander.
  3. While the rice cooks: cut the fish into two large pieces, pat them dry and season.
  4. Warm the olive oil in a wide pan over medium and cook the pepper and jalapeno for 4 minutes, then add the tomato and simmer 6 minutes until it breaks down into a loose sauce.
  5. Lower the fish into the sauce, cover, and poach gently for 8 minutes without stirring, until it is opaque through and flakes at a push.
  6. Slide the spinach into the sauce around the fish and let it wilt for a minute, then take the pan off the heat and squeeze over half the lime.
  7. Fork the brown rice into the sauce at the edges of the pan so it soaks up the liquid, then serve the fish straight from the pan with the coriander scattered over and the rest of the lime alongside.
