  • 600 g White fish fillet
  • 300 g Cabbage
  • 2 Guajillo chilies
  • 3 Lime
  • 3 cloves Garlic
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 3 tbsp Cilantro (optional)
  • 1 Avocado (optional)

Method

  1. Toast the guajillos, soak until soft, then blend with the garlic, oil, salt, and juice of one lime to a paste.
  2. Coat the fish in the chili paste.
  3. Finely shred the cabbage and dress with the juice of a second lime.
  4. Grill or sear the fish over high heat until charred and flaking, 3 minutes a side.
  5. Serve the fish on the slaw with avocado, cilantro, and the last lime.
