Ingredients

  • 22 g Brown rice
  • 220 g White fish fillet
  • 15 g Ginger
  • 2 tsp Fish sauce
  • 1 Lime
  • 100 g Bean sprouts (optional)
  • 80 g Green beans (optional)
  • 2 Thai chilies (optional)
  • 12 g Cilantro (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 26 minutes.
  2. While the rice cooks: cut the ginger into matchsticks and scatter half over a heatproof plate. Lay the fish on top.
  3. While the rice cooks: chop the chillies and coriander, top and tail the green beans, and whisk the fish sauce with the juice of the lime and the remaining ginger into a hot-sour dressing.
  4. Set the plate over an inch of simmering water, cover and steam the fish for 9 minutes, until it turns opaque and flakes at a gentle push.
  5. Add the green beans and bean sprouts alongside the fish for the last minute, covered, so they only just soften.
  6. Fork the brown rice into a shallow bowl, lift the fish and vegetables on top with the steaming juices from the plate, and pour the lime-chilli dressing over the hot fish. Scatter the coriander.
