Ingredients

  • 110 g Brown rice
  • 250 g Chicken breast
  • 1½ tsp Ground cumin
  • 1 Lime
  • 1 tbsp Olive oil
  • 100 g Black beans (optional)
  • 60 g Corn kernels (optional)
  • 100 g Tomato (optional)
  • 1 Jalapeno (optional)
  • 12 g Cilantro (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 30 minutes.
  2. While the rice cooks: cut the chicken into thick strips and toss them with the cumin and salt.
  3. While the rice cooks: drain and rinse the black beans, dice the tomato, slice the jalapeno, and chop the coriander.
  4. Heat the olive oil in a heavy pan over high and cook the chicken for 6 minutes, leaving it undisturbed at first so it takes real colour, until browned and firm.
  5. Push the chicken aside, tip the corn into the bare part of the pan and let it sit 2 minutes without stirring until it blackens in spots, then add the black beans to warm through.
  6. Fluff the brown rice into a wide bowl and tip the chicken, charred corn and beans over it. Add the raw tomato and jalapeno, squeeze the lime across the whole bowl, and finish with the coriander.
