Chicken, Rice and Black Bean Burrito

- 1 Whole wheat tortillas
- 250 g Chicken breast
- 80 g Brown rice
- 1½ tsp Ground cumin
- 1 Lime
- 1 tbsp Olive oil
- 100 g Black beans (optional)
- 120 g Tomato (optional)
- 1 Jalapeno (optional)
- 12 g Cilantro (optional)
Method
- Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 28 minutes.
- While the rice cooks: cut the chicken into thick strips and toss them with the cumin and salt.
- While the rice cooks: dice the tomato with the jalapeno and coriander and sharpen it with half the lime for a raw salsa. Drain and rinse the black beans.
- Heat the olive oil in a heavy pan over high and cook the chicken for 6 minutes, leaving it undisturbed at first so it takes real colour, until browned and firm.
- Add the black beans to the pan for the last minute to warm through and pick up the cumin oil, then squeeze in the rest of the lime off the heat.
- While the chicken finishes, warm the tortilla in a dry pan for a minute a side until it is soft and flexible — a cold tortilla splits the moment you roll it.
- Lay the warm tortilla down, spoon the rice in a line down the middle leaving a clear border, then pile on the chicken and beans and half the salsa. Fold the two ends in and roll it away from you, tight.
- Cut the burrito in half on the diagonal and serve with the rest of the salsa alongside.
