- 500 g Ground turkey
- 150 g Puy lentils
- 1 Egg
- 30 g Parmigiano-Reggiano
- 400 g Canned tomatoes
- 3 cloves Garlic
- 2 tbsp Extra-virgin olive oil
- 1 tsp Dried oregano
- ½ tsp Salt
- 6 Basil (optional)
Method
- Simmer the lentils in unsalted water until soft, about 20 minutes, then drain and cool slightly.
- Mash half the cooked lentils and mix with the turkey, egg, grated parmesan, half the garlic, salt, and oregano; roll into balls.
- Brown the meatballs in the oil on all sides, then lift out.
- Add the tomatoes and remaining garlic and lentils to the pan, return the meatballs, and simmer until cooked through, 15 minutes.
- Tear basil over and serve.
