  • 4 Leek
  • 3 Potatoes
  • 2 Carrot
  • 4 tbsp Olive oil
  • ½ tsp Salt
  • 1 Onion (optional)
  • 2 cloves Garlic (optional)

Method

  1. Slice the leeks, onion, carrot, and potato into rough chunks.
  2. Sweat the leek, onion, and garlic in the olive oil until soft, 6 minutes.
  3. Add the carrot, potato, salt, and water and simmer until the potatoes start to break, 25 minutes.
  4. Serve rustic, with a thread of olive oil.
