- 250 g Cabbage
- 2 Carrot
- 1 Turnip
- 1 Leek
- 2 Potatoes
- 2 tbsp Olive oil
- ½ tsp Salt
- 1 Celery (optional)
Method
- Soak the beans for an hour and drain; dice all the vegetables small.
- Sweat the leek, carrot, turnip, and celery in the olive oil, 5 minutes.
- Add the beans, salt, and water and simmer 30 minutes, then add potato and cabbage for a final 15.
- Serve piping hot.
