Ingredients

  • 300 g Yellow split peas
  • 2 Leek
  • 1 Onion
  • 2 tbsp Olive oil
  • ½ tsp Salt
  • 1 Carrot (optional)
  • 1 tsp Mint (optional)

Method

  1. Slice the leeks, onion, and carrot and sweat in the olive oil until soft, 6 minutes.
  2. Add the split peas, salt, and plenty of water and simmer until the peas fall apart, 45 minutes.
  3. Blend until velvety, loosening with water as needed.
  4. Serve topped with a little mint.
