- 300 g Yellow split peas
- 2 Leek
- 1 Onion
- 2 tbsp Olive oil
- ½ tsp Salt
- 1 Carrot (optional)
- 1 tsp Mint (optional)
Method
- Slice the leeks, onion, and carrot and sweat in the olive oil until soft, 6 minutes.
- Add the split peas, salt, and plenty of water and simmer until the peas fall apart, 45 minutes.
- Blend until velvety, loosening with water as needed.
- Serve topped with a little mint.
