  • 240 g White fish fillet
  • 2 Corn tortillas
  • 1 Lemon
  • 1 tsp Dried oregano
  • 1 tsp Olive oil
  • 60 g Romaine lettuce (optional)
  • 80 g Tomato (optional)
  • 6 g Dill (optional)

Method

  1. Cut the fillet across into fingers about as thick as your thumb and pat every face dry — wet fish steams in the pan and never browns.
  2. Whisk the juice of half the lemon into most of the olive oil a little at a time with the dried oregano, until it goes cloudy and stops splitting apart, then stir the chopped dill through. This is the ladolemono, and it is the only sauce the tacos need.
  3. Shred the romaine into fine ribbons and dice the tomato small, keeping the two in separate piles so the leaves stay dry until they reach the table.
  4. Bring what is left of the olive oil to a shimmer in a heavy pan and lay the fish fingers down with a gap between each. Seven minutes in all, one turn, and off the heat while the flesh still holds together rather than falling into flakes.
  5. While the fish is in the pan, stack the two corn tortillas on a dry skillet over a low flame with a saucer on top and leave them three minutes to steam each other soft.
  6. Put the fish, the warm tortillas, the ladolemono, the romaine and the tomato out in separate dishes with the last half of the lemon beside them, and let whoever is eating fill each tortilla as they go.
