Ingredients

  • 2 Corn tortillas
  • 200 g Shrimp
  • 90 g Zucchini
  • 1 tsp Garlic-infused olive oil
  • 1 tsp Sumac
  • 6 g Mint
  • ½ Lemon
  • 0.2 tsp Salt
  • 50 g Carrot (optional)
  • ½ tsp Aleppo pepper (optional)
  • 10 g Parsley (optional)

Method

  1. Pat the prawns dry on kitchen paper and toss them with the sumac, the Aleppo pepper and the salt so the spice sticks rather than slides off.
  2. Cut the courgette into half-moons the thickness of a coin, coarsely grate the carrot, and roughly chop the parsley and mint together.
  3. Warm the garlic-infused oil in a wide pan and give the courgette and carrot five minutes to soften and colour at the edges, turning them now and then.
  4. Push the vegetables out to the rim and lay the prawns in the clear space for three minutes, turning once, until they curl tight and turn opaque. Squeeze the lemon half over the pan off the heat.
  5. While the prawns colour, set the corn tortillas one at a time onto a second dry pan for about half a minute a side, stacking them under a cloth as they come off so they steam each other soft.
  6. Bring the pan and the warm tortillas to the table with the chopped herbs beside them and fill each tortilla as you eat it — prawns first, vegetables over, herbs last.
