  • 200 g Quinoa
  • 1 Cucumber
  • 1 Lemon
  • 3 tbsp Extra-virgin olive oil
  • ¾ tsp Salt
  • 150 g Cherry tomatoes (optional)
  • 4 tbsp Parsley (optional)
  • 2 Scallions (optional)

Method

  1. Rinse the quinoa in a fine sieve until the water runs clear.
  2. Simmer the quinoa in plenty of salted water in a covered saucepan over low heat until the spirals show, about 15 minutes.
  3. Rest the cooked quinoa off the heat, covered, for 5 minutes, then fluff it with a fork.
  4. While the quinoa cooks, dice the cucumber, halve the tomatoes, and slice the scallions.
  5. Chop the parsley, then zest and juice the lemon.
  6. Toss the fluffed quinoa with the vegetables, parsley, lemon zest and juice, and the olive oil; season to taste.
  7. Serve at room temperature, or chill it for lunch tomorrow.
