About Revithia

Revithia is a Greek chickpea soup, traditionally associated with the island of Sifnos, where it was long baked slowly overnight in a clay pot for Sunday lunch. This stovetop version keeps the soul of the dish while trimming the time: chickpeas simmered with sliced onion, rosemary and good olive oil until they turn soft and creamy, then finished with lemon. The flavor is rustic and deeply savory, the chickpeas giving a nutty, almost buttery body while rosemary lends its resinous fragrance and the lemon cuts through with brightness at the end. It is the kind of unpretentious, nourishing food that sits at the heart of the Mediterranean diet, built from a handful of pantry staples and time.

What sets this revithia apart is the finish. Rather than leaning on cream or stock, it is thickened and brightened at once with a slurry of flour whisked into lemon juice, an avgolemono-style trick that gives the soup a velvety body and a clean, citrusy tang without any dairy. Simmering the chickpeas until some break down naturally builds the creamy base before that final thickening. It is traditionally served in generous bowls with an extra drizzle of raw olive oil over the top and crusty bread alongside for dipping, making a satisfying vegan main that costs very little and rewards a slow, gentle cook.
