About Quinoa Tabbouleh
Quinoa Tabbouleh reworks the classic Levantine parsley salad, swapping the traditional bulgur for quinoa while keeping the dish's true identity intact. Authentic tabbouleh is, above all, a herb salad — parsley and mint make up the bulk of it, with grain playing a supporting role — and this version honors that by letting masses of finely chopped herbs dominate the bowl. Diced tomato and cucumber add juice and freshness, scallions bring a mild allium sharpness, and a simple lemon-and-olive-oil dressing keeps everything vivid and clean. Quinoa's tiny, slightly bouncy grains carry the dressing well and quietly boost the protein and fiber.
The result is a bright, grassy, intensely fresh salad that tastes of lemon and green herbs more than of anything cooked. It comes together in around 25 minutes and is naturally vegan and gluten-free, making it an easy addition to a mezze spread or a cooling counterpoint to grilled and spiced dishes. Chopping the parsley and mint finely rather than roughly is what gives it the right confetti-like texture and releases the herbs' aroma. Let it sit briefly before serving so the flavors marry, and serve it cool, either as a standalone salad or one component of a larger table.
