Ingredients

  • 100 g Brown rice
  • 200 g Salmon fillet
  • 15 g Ginger
  • 1 tbsp Soy sauce
  • 1 tsp Toasted sesame oil
  • 80 g Edamame (optional)
  • 100 g Spinach (optional)
  • 2 tsp Rice vinegar (optional)
  • 15 g Scallions (optional)
  • 1 tsp Sesame seeds (optional)

Method

  1. Rinse the brown rice until the water runs clear, then simmer it in twice its volume of water, covered, until tender and the water is absorbed, about 28 minutes.
  2. While the rice cooks: pat the salmon dry and grate the ginger. Stir the ginger together with the soy sauce and rice vinegar to make the glaze.
  3. While the rice cooks: slice the scallions thinly on the diagonal and wash the spinach.
  4. Heat the sesame oil in a heavy pan over medium-high. Lay the salmon in skin-side down and leave it alone for 5 minutes, until the skin releases and crisps.
  5. Turn the salmon, pour in the ginger-soy glaze, and spoon it over the fillet for 2 minutes as it thickens and coats.
  6. Lift the salmon onto a plate. Tip the spinach and edamame into the same pan and toss for 1 minute in the remaining glaze until the spinach just wilts.
  7. Fluff the brown rice into a deep bowl, pile the glazed greens alongside, set the salmon on top and pour over any glaze left in the pan. Finish with the scallions and sesame seeds.
