- 500 g Beets
- 1 Shallot
- 1 tsp Dijon mustard
- 2 tbsp Red wine vinegar
- 3 tbsp Olive oil
- 0.3 tsp Salt
- 40 g Walnuts (optional)
- 10 g Parsley (optional)

- Roast the whole beets at 200°C until a knife slides in easily, 45 minutes.
- Whisk the minced shallot, mustard, vinegar, olive oil, and salt into a vinaigrette.
- Peel and dice the warm beets, toss in the dressing, and top with walnuts and parsley.
