  • 300 g Puy lentils
  • 2 Shallot
  • 1 tbsp Dijon mustard
  • 2 tbsp Red wine vinegar
  • 3 tbsp Olive oil
  • 0.4 tsp Salt
  • 1 Carrot (optional)
  • 15 g Parsley (optional)

Method

  1. Simmer the lentils with the whole shallot and diced carrot until tender but holding, 22 minutes, then drain.
  2. Whisk the minced shallot, mustard, vinegar, olive oil, and salt into a dressing.
  3. Toss the warm lentils in the dressing and fold through the parsley.
