Method

  1. Boil the potatoes until tender and hard-boil the eggs in the same pot, then drain and cool both.
  2. Blanch the green beans until just tender, then refresh them in cold water.
  3. Sear the tuna briefly in a hot pan so it stays pink within, then slice it.
  4. Whisk the mustard, lemon, olive oil, and salt into a dressing.
