Ingredients

  • 170 g Chicken breast
  • 100 g Avocado
  • 25 g Almonds
  • 2 tbsp Extra-virgin olive oil
  • ½ Lemon
  • 60 g Romaine lettuce (optional)
  • 80 g Cucumber (optional)
  • ¼ tsp Black pepper (optional)

Method

  1. Open the chicken breast out flat so it cooks at one thickness and season it with the black pepper and salt.
  2. Toast the almonds in a dry pan for three minutes, shaking often, until they smell nutty and colour at the edges, then tip them straight out of the pan.
  3. Get a ridged pan hot and dry and cook the flattened breast five minutes on the first side and three on the second, until it carries dark bars and springs back under a finger.
  4. Rest the chicken four minutes, then tear it along the grain into rough strips. Meanwhile shred the romaine, slice the cucumber and whisk the olive oil into the lemon juice.
  5. Toss the leaves and cucumber through the dressing, slice the avocado over at the last moment so it keeps its colour, lay the torn chicken on top and crush the almonds over in your fingers.
