  • 190 g Chicken breast
  • 90 g Fennel bulb
  • 70 g Carrot
  • 8 g Basil
  • ½ Lemon
  • 1 tbsp Garlic-infused olive oil
  • ¼ tsp Black pepper (optional)

Method

  1. Shave the fennel thinly across the bulb, peel the carrot into ribbons, and drop both into iced water for five minutes so they stiffen and curl.
  2. Open the chicken breast out flat so it cooks at one thickness and season it with the black pepper and salt.
  3. Get a ridged pan hot with half the garlic-infused oil and cook the breast five minutes on the first side and three on the second, until it carries dark bars and springs back under a finger.
  4. Rest the chicken four minutes, then tear it along the grain into rough strips.
  5. Drain the fennel and carrot and pat them dry, toss them with the lemon juice and the rest of the oil, lay the torn chicken over with its juices and tear the basil across at the last moment so it does not blacken.
