  • 200 g Puy lentils
  • 200 g Cherry tomatoes
  • 2 cloves Garlic
  • 3 tbsp Extra-virgin olive oil
  • ¾ tsp Salt
  • 100 g Spinach (optional)
  • 1 Lemon (optional)

Method

  1. Simmer the lentils in salted water until tender, about 20 minutes; drain.
  2. Heat the oven to 200°C (400°F).
  3. Toss the cooked lentils with the halved tomatoes, garlic, and two tablespoons of oil in a baking dish.
  4. Nestle the salmon on top, drizzle with the rest of the oil, and bake until the salmon flakes, about 14 minutes.
  5. Stir the spinach through the hot lentils until wilted and squeeze the lemon over.
  6. Serve the salmon over the lentils.
