- 180 g Lupin pasta
- 260 g Salmon fillet
- 350 g Spinach
- 2 tbsp Extra-virgin olive oil
- 2 cloves Garlic
- 1 tsp Salt
- 1 bunch Dill (optional)
- 1 Lemon (optional)
- ½ tsp Black pepper (optional)
Method
- Bring a large pot of well-salted water to a boil.
- Roast the salmon at 200°C for 10–12 minutes, until it flakes; then break into large pieces.
- While the salmon roasts, slice the garlic and roughly chop the dill.
- Cook the lupin pasta 5 minutes — one minute shy of the pack's 6. It softens fast, so drain it early rather than late.
- Reserve a mugful of pasta water, then drain.
- Soften the garlic in the olive oil over medium heat for 1 minute, then add the spinach in handfuls and wilt it down.
- Fold the lupin pasta and flaked salmon through the spinach, loosening with pasta water, and stir in the dill.
- Squeeze the lemon over, add black pepper, and serve.
