Salmon Teriyaki

Ingredients
- 2 fillets Salmon fillet
- 3 tbsp Japanese soy sauce (koikuchi shoyu)
- 3 tbsp Mirin
- 2 tbsp Sake
- 1 tbsp Sugar
- 1 tbsp Neutral oil
- 1 Scallions (optional)
Method
- Whisk the soy, mirin, sake, and sugar together into a teriyaki glaze.
- Heat the neutral oil in a pan over medium-high and sear the salmon skin-side down until the skin is crisp, about 4 minutes, then flip and cook 2 minutes more.
- Pour in the glaze and spoon it over the salmon until it thickens and clings, about 3 minutes.
- Scatter sliced scallion over and serve with rice.
