  • 22 g Brown rice
  • 240 g White fish fillet
  • 1 tsp Ground cumin
  • ½ tsp Olive oil
  • ½ Lemon
  • 100 g Tomato (optional)
  • 60 g Bell pepper (optional)
  • 100 g Spinach (optional)
  • 5 g Walnuts (optional)
  • 1 tsp Ground coriander (optional)
  • 10 g Parsley (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 26 minutes.
  2. While the rice cooks: heat the oven to 200C. Crush the walnuts with the cumin, coriander, parsley and a little of the olive oil into a rough, coarse paste.
  3. While the rice cooks: slice the pepper into strips and cut the tomato into wedges.
  4. Spread the pepper and tomato in a small roasting dish and roast 10 minutes, until the pepper softens and the tomato splits.
  5. Lay the fish on the vegetables, spread the walnut paste over the top and roast 10 minutes more, until the fish flakes and the crust has dried and darkened.
  6. Tuck the spinach into the hot juices around the fish and return the dish to the oven for 1 minute, just to wilt it. Squeeze over the lemon.
  7. Fork the brown rice into the corner of the dish so it soaks up the spiced juices, then serve the fish straight from the dish with the peppers and spinach alongside.
